Illustration from the Florentine Codex of the final steps in casting gold models; gold is melted in a furnace (left), a ladle of molten gold in the foreground (center) is going to be poured into an open mold, which was heated in a brazier to melt the wax (and keep the mold hot enough to allow gold to flow through the sprues and tiny channels), and the finished product is washed in an alum bath:

aztec society in particular turned up around 1800 years after rome did
other mesoamericans developed earlier, with olmecs actually being at a roman-ish level of development before rome itself was
the rest came later, however

if you're referring to this, yeah, the new world was behind the old world due to little livestock, terrain, beast of burden, etc.

it's funny because the europeans were literally tribal barbarians during roman society but their development accelerated so quickly that they became the dominant force in the world

depends on the kind of European. anyway, they were in an accelerated state of technological advancement in part of other peoples, such as the Chinese for gunpowder, paper, and compasses, Mesopotamia for the wheels, irrigation, and writing, and the indus valley for advanced city planning and sanitation, egypt for medicine and grand architectural projects, such as pyramids.

those civilizations had extensive contact, with only mesoamerica and the andes only having limited contact, aside from indirect trade.

the Europeans incorporated them into their societies and improved on such.

yes, chinese people had "medicine", swords and guns and also bombs, which europeans used to thoroughly rape natives
the connected land likely made it possible to pretty much pick up where other societies left off once europeans stopped being barbarians (or in the case of china copy what they had)
